The perfect snack or breakfast for you this Pesach!

These muffins are not only kosher for Pesach, but they are gluten-free, low in carbohydrates and simple to make.

Apples contain pectin, a natural fibre found in the skin and pulp, which is beneficial for gut health and has cholesterol-lowering effects. They also have a low glycaemic index, due to their high fibre content, which means this fruit is ideal for weight loss, or diabetic patients, as the sugar found in the fruit does not spike your blood sugar soon after eating it.

Apples contain the bioactive ingredient quercetin, that acts as the master gene regulators, ‘turning ON’ genes that are involved in longevity and anti-oxidant effects and ‘turning OFF’ genes that would otherwise promote inflammation.

Cinnamon (known as Cinnamomum), is also known for its ability to help control blood sugar, reduce inflammation and balance metabolism.

All ingredients used are kosher for Pesach.

Ingredients

(makes 9 muffins)

2 cups almond flour
½ cup desiccated coconut
1 top red apple (grated, keep juice)
2 peeled green apples (diced)
¼ cup chopped almonds, plus extra for sprinkling on top of muffins
4 eggs
1 teaspoon baking powder
1½ teaspoons vanilla essence
1 tablespoon honey
5 teaspoons cinnamon
1 teaspoon ground ginger
¾ teaspoon nutmeg
½ teaspoon salt

Method

1 Pre-heat the oven to 180°C.
2 In a large mixing bowl, add the almond flour, desiccated coconut, chopped almonds, baking powder, cinnamon, ground ginger, nutmeg and salt. Mix together.
3 To the dry ingredients add the grated red apple, juice included, as well as the peeled and diced green apples.
Add the eggs, vanilla essence and honey.
4 Mix all the ingredients together until well-combined, forming a thick muffin batter.
5 Grease an oven-proof non-stick muffin baking tray. Using two spoons, scoop the muffin batter into each holder, filling it until its ¾ full.
6 Sprinkle some chopped almonds onto each muffin.
7 Bake for 30 minutes until golden brown.
