Savory Beetroot Oats Bowl & Green Breakfast Smoothie Bowl
Being super confused as the whether these warm sun rays are just a taste that summer is on it’s way , quite early might I add, or whether we are still in for a few winter days, I decided to make myself both a warming winter and refreshing summer breakfast- why not?!
Both these bowls have so many nutritional benefits that I’m quite happy to be eating either of them in winter or summer. In Fact, I almost forgot to take a photo of them before I dug into them myself.
What could go wrong with these breakfast bowls?
We have both insoluble and soluble fibres from the oats, beetroot, spinach, berries and seeds. The seeds and avocado provide you with a good dose of healthy fats. A great variety of vitamins and minerals are found in in both dishes, not forgetting the bioactive compounds such as sulfophane, quercetin, resveratrol, betalains and carotenoids.
These bowls attend to your gut, your body’s natural detoxification pathways, your inflammatory pathways , your blood pressure, your hair, skin and nails, your mind and the list goes on.

Savory Beetroot Oats Bowl
Ingredients
2 small beetroots
1 cups of water plus extra for poaching egg
1/2 raw cup of steel cut oats
1 handful baby spinach
1 egg
salt
Method
1 Peel the beetroot and cut them into smaller pieces places them into a small pot with 1 cup of water.
2 Boil the beetroot for 10 minutes, until slightly softened but not overcooked.
3 Remove the beetroot, placing it into a smaller bowl and add a few tablespoons of the beetroot water remaining in the pot.
4 Using a stick blender, blend the beetroot into a puree consistency (this can also be done in a food processor).
5 In the same pot, add half a cup of oats, adding extra water if needed. If you are making the oats the following day, just add 1 cup of water.
6 As the oats begin to simmer add 2 tablespoons of the beetroot puree with a sprinkle of salt.
7 Poach your egg. I poach mine in the microwave as its quick , but you can poach yours in a pot as well.
8 Place the oats in bowl, with the poached egg on top and garnish with some freshly chopped and seasoned baby spinach.
*Tip: There will be beetroot left over which you can keep for salads, extra breakfast bowls, hummus or other dishes. I make mine the night before so I don’t have to rush the next day.
Green Breakfast Smoothie Bowl
Ingredients
Smoothie
1 1/2 cups of baby spinach
1/4 avocado
4 strawberries
1/4 cup blueberries
1 cup water
1 Place the spinach, avocado, washed strawberries and blueberries into a blender and blitz away
2 Add the water and continue to blend until you get a smooth consistency
3 Pour the smoothie into a small bowl.
4 Cut your strawberry into thin slices, placing them delicately in a row or in a any creative pattern on top of your smoothie.
5 Following the pattern place your blueberries
6 Finish off with a sprinkle of chia seeds.
