Looking to quickly pickle some radishes, onion or even mushrooms?
This recipe is for you.
A few simple ingredients, 10 minutes of your time and you have a tangy pickle to add to your morning eggs, sandwiches, tacos and poké bowls.
This pickle recipe is not the one I refer to when I reference fermented foods that are good for the gut. This pickling recipe uses vinegar and does not cause fermentation through an oxygen-deprived environment over a few days.
This recipe is great for when you are in a hurry and are looking for that extra zing.
Ingredients
8-10 radishes
½ cup apple cider vinegar
¼ cup red wine vinegar
½ cup water
1 teaspoon coarse salt
2 teaspoon raw honey
Method
1 Wash the radishes and remove their greens
2 Using a sharp knife or a mandolin, cut the radishes into very thin slices
3 Place them in a glass bowl or jar
4 Whisk together the red wine vinegar, apple cider vinegar, water, salt and honey
5 Pour the pickling liquid over the radishes
6 Refrigerate for at least 10 minutes before serving
7 Add one or two fresh radishes on top to add that fresh nutrient component to the garnish
