These date balls are one of my basic go to snacks. They just tend to hit the nail on the head when it comes to the right amount of chewiness, chocolatiness, nuttiness with a touch of coconut flair.
Below is one of my date ball recipes. These yummy treatrs can be made in so many different ways.
Coconut and Almond Date Ball
Ingredients
18 medjool dates
1/3 cup raw cocoa powder
½ cup unsweetened desiccated coconut plus a bit extra for coating
¾ cup blanched almonds
½ tablespoon coconut oil (optional)
Method
1 Pit the dates and pop them into a food processor.
2 Add the cocoa powder, desiccated coconut, blanched almonds and coconut oil.
3 Pop the lid on the food processer and blend away for about 3-4 minutes or until you can see the mixture binding together, almost into a ball.
4 Using your hands grab about a tablespoon worth date mixture and start rolling it into a ball.
5 Place the rolled ball into a tray or dish that holds more desiccated coconut for coating.
6 Repeat this until you have rolled all the delicious date balls and start coating them evenly with the coconut.
7 Once complete place them on a serving tray or in a Tupperware to store.
*You may find that they are initially a bit soft. If that is not your vibe don’t worry, prepare them the night before as they tend to ‘come into their own ‘overnight.
** You don’t have to use the coconut oil. If you are looking for a glossy coating or if your mixture isn’t binding well then, I recommend it.
***Tip: I keep my date balls in the freezer as they then last quite long AND they are super chewy and all the flavours are enhanced when they come straight out the freezer- try it!!
